CINNAMON-SUGAR FILLING
- ½ cup granulated sugar (100g)
- 1 Tbsp dark brown sugar (optional)
- 2 Tbsp butter, softened to room temperature (28g)
- 2 tsp milk
- 1 tsp cinnamon
- 1 tsp cornstarch
COOKIES
- 2¼ cup all-purpose flour (280g)
- 2 tsp cornstarch
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup granulated sugar (100g)
- ½ cup powdered sugar (55g)
- 4 Tbsp butter, melted and hot (56g)
- ⅕ cup vegetable oil (45g)
- 1 egg, lightly beaten
- 1 Tbsp milk
- 1 tsp vanilla extract

CINNAMON-SUGAR FILLING
- In a small bowl, mix all filling ingredients until you have a paste-like consistency. Chill in the fridge until needed.
COOKIES
- Set the oven rack in the middle position and preheat the oven to 350 degrees F. Line two baking sheets with parchment paper. Set aside.
- Sift together flour, cornstarch, baking powder, baking soda and salt into a medium bowl. In a large bowl, whisk together the melted butter, granulated sugar and powdered sugar. Continue to whisk, adding vegetable oil, egg, milk and vanilla to the mixture. Use a rubber spatula to fold in the dry ingredients until a soft dough forms.
- Divide dough into mini balls just larger than a walnut (weighing 11-12g each) and flatten each ball into a disk. Remove the filling from the fridge and divide it equally among only half of the dough discs. Place the remaining dough discs on top, pinch the sides together and roll into balls. Arrange the cookie balls on the prepared baking sheets at least two inches apart.
- Bake one baking sheet at a time, until cookies are golden brown around the edges, about 11 to 13 minutes. The centers may seem underdone, but they will firm upon cooling. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
